Basil fusilli Salad

For 4 persons

Ingredients:

  • 250 gr. Fusilli pasta
  • ½ Red pepper, chopped
  • 3 Tbsp pitted black olives, chopped
  • 2 Tbsp parsley chiseled
  • 2 Tomatoes, peeled, seeded and chopped    

The dressing:

  • 2 Tbsp red wine vinegar or fruit vinegar
  • 1 Tbsp olive oil
  • 1 Tbsp water
  • 2 Tbsp fresh basil finely chiseled
  • 2 Tsp Dijon mustard 
     

Direction:

  • Cook the pasta, strain from water, and in a large bowl combine with the chopped red pepper, olives, parsley and tomatoes.
  • Mix together the ingredients for the dressing in another bowl.
  • Pour over the pasta and mix well.
  • Cover and refrigerate for 2 hours to blend flavors.
  • Serve cold.
     

Tip :

  • You can add some chicken, salmon, tuna in wate or even hard boiled eggs to make it a meal!
