For 4 persons
Ingredients:
- 250 gr. Fusilli pasta
- ½ Red pepper, chopped
- 3 Tbsp pitted black olives, chopped
- 2 Tbsp parsley chiseled
- 2 Tomatoes, peeled, seeded and chopped
The dressing:
- 2 Tbsp red wine vinegar or fruit vinegar
- 1 Tbsp olive oil
- 1 Tbsp water
- 2 Tbsp fresh basil finely chiseled
- 2 Tsp Dijon mustard
Direction:
- Cook the pasta, strain from water, and in a large bowl combine with the chopped red pepper, olives, parsley and tomatoes.
- Mix together the ingredients for the dressing in another bowl.
- Pour over the pasta and mix well.
- Cover and refrigerate for 2 hours to blend flavors.
- Serve cold.
Tip :
- You can add some chicken, salmon, tuna in wate or even hard boiled eggs to make it a meal!
